#Carrabba's helped my find my Pasta Personality...

When we first moved back to Omaha, we discovered what was a new place to us-Carrabba's Italian Grill. It was awesome! I loved it and in fact, last year for my 9th Anniversary my husband and I ordered Carraba's to go at my request for dinner! (As a side note, yesterday was my 10th anniversary-it has been far too long since I ate there.)
Well, Carraba's has a fun Pasta Personality Quiz on Facebook right now that I could hardly wait to try it out! Any guesses as to what my pasta personality is?! Here was my result...
I am Penne Franco...I love how my pasta personality is "One of a Kind"! Love that! Plus the Penne Franco looks and sounds to good it is making me drool just a little bit! I honestly LOVE pasta and this meal looks fantastic and it got me thinking about my favorite pastas. As many of you know, I am Greek. So, my ultimate favorite pasta is a Greek recipe for Pastichio which we sometimes call "Greek Lasagna". I have been eating this since I was a little girl and it is the BEST! Seriously, It is SOOO good! It is a Greek family recipe, and my mom and XiaXia (grandma in Greek) are totally cool with my sharing the recipe with all of you lucky readers!! Check it out (this makes a big huge pan of this and you will have leftovers...feel free to make a half batch!! Oh and consider this fair warning that it is a decadent yummy food, but it is far from low cal...):
Pastichio (This is broken up into 2 parts-the base and the cream sauce-they bake together in the oven in the end)
Base Mixture
1-1.5 lb Ziti or Pasta Penne
2.5-3 lb Ground Beef
2 large chopped onions
Olive Oil
1 small can tomato paste
1 lb grated Romano or Parmesan Cheese
4 Eggs
1/2 C butter
3/4 t cinnamon
1/2 cinnamon stick
dash nutmeg
salt & Pepper
butter to grease pan
Brown onions in a little olive oil, add the ground beef and brown. Drain the grease well. TO this, add tomato paste, cinnamon, cinnamon stick, nutmeg, salt and pepper. Cook about 15 minutes covered until you have a thick sauce-add a little water if necessary-let cool. Remove cinnamon stick, then add 2 well-beaten eggs and mix well (make sure mix is cool before adding eggs or they will cook). Then cook for about 5 more minutes.
Boil pasta as directed on package and drain well. Beat 2 eggs in a large pot or bowl and add the pasta to them. Grease the sides and bottom of a large (DEEP) roasting pan (you can use the large foil disposable pans from the store if you do not have a big roasting pan). Cover the bottom of the pan with half the pasts/egg mixture. Sprinkle well with the grated cheese. Next add the meat mixture and pack down well. Add the rest of the pasta mixture, and again generously add a layer of the grated cheese. Melt 1/2 C butter and drizzle over mix in pan. Move on to Cream sauce...
Cream Sauce
3 C Milk
3 C Half and Half
1/2 C butter
3 heaping T flour
6 beaten Eggs
salt to taste
Step 1-Warm and heat in a large double boiler: Half the milk, half the Half and Half, all butter, and salt to taste.
Step 2-Mix remaining milk and half and half with flour. Stir until smooth. Add 6 beaten eggs and mix completely. Add this mixture very slowly to the step 1 mixture on the stove. You add slowly and stir constantly because you do not want the eggs to cook separately from the mix. Continue stirring until the mixture is thick (this could be a while).
Pour thickened mixture immediately over the pasta meat mixture in the roasting pan. Sprinkle the top lightly with the remaining cheese, a touch of cinnamon and nutmeg. Bake in a 400 degree oven for about 30 minutes (check it in 20 minutes and if it is getting too brown turn down to 350 degrees).
This is a pretty extensive recipe as you can see and it is high calorie, but it is SOOOOO good!

Does anyone remember last year when I wrote about how much fun I had at Free Comic Book day last year with my kids?! If not you can read all about the fun here. Here is the 411 on Free Comic Book Day...The first Saturday in May of each year (tomorrow!), comic book stores across North America (and evidently all around the world) give away comic books for FREE to anyone that comes into their store. That is THIS SATURDAY May 7!! Wowsa!
There is a website, Freecomicbookday.com all about it. Go check that out and see where there are participating stores near you. (There is a store locator on the left side of the sites main page where you can find local shops. Their participation and rules can evidently vary from store to store though so beware of that.)
And FYI locals...There are 6 shops in the Omaha area participating!
It should be pretty awesome, so you may want to go check it out! I will be there with all 5 kiddos!

SOOO...my "winning experiment" has taken a hyatis while I have had the baby and tried to adjust to being a mom of 5...wow that is harder than people say...

I have been looking for great last minute Mothers Day items to tell you about (and frankly for my mom and mother-in-law), so I was super excited this morning to get an email from Walgreens about Free 8x10 Collage Prints.
Here is the 411: Walgreens is offering a FREE 8×10 Collage Print thru Saturday. All you have to do is enter the code FREECOLLAGE at checkout. Make sure you select to pick it up at your local Walgreens. Or if you, like me, live far from mom, have it sent to HER local Walgreens. Maybe it is tacky to have her pick it up, but it is convenient and my mom would not mind picking it up to get a cute collage of her grandkids! (I might actually send there and have my sister pick it up for me to give to my mom though).

Have you Tried Cici's Pizza yet?

As I told you here, we found a great inexpensive dinner buffet, Cici's Pizzas.
Cici's Pizzas has a $4.99 endless value dinner (buffet) that includes pizza, pasta, salad, bread sticks, and desserts! And for kids the endless value dinner is even less (it is less that $3). Which means my HUGE family of 2 adults and 4 kids (that eat) can eat for less than $25.
I told you before that the kids and I ate at Cici's Pizzas once but that Wes had not yet tried it. Well, we had the chance to go over there with Wes, my mom, brother and sister after baby E was born. And guess what? Everyone really liked it. Wes thought it had great variety and that the food was good-especially for the price!
So, next time you need a night off from cooking and are looking for an affordable, tasty and fun place to take the family, check out your local Cici's Pizzas. You won't regret it!

Walmart "no need to bring ads" is sooo wrong...at least for me...

You may or may not be aware that Wal-mart updated their ad matching guarantee policy and coupon policy recently. I have not mentioned this to this point, but I want to say a few things about the new ad matching guarantee policy and how it has affected me locally.
First thing I want to note is that the new policy states "We do not require customers to have the ad with them to honor a competitor's ad." Many, Many bloggers are praising this new note as it makes ad matching easier to do when you do not have to bring the ads and prove each price match. Apparently at most Wal-Marts nationwide in the past it has been commonplace to have to have the ads with you before this change. That is not the case here in Omaha.
Here in Omaha, I have never before this policy change brought ads with me to price match. I just have a list with the price matches listed on it. I have never had a problem price matching like that and have only been asked to prove an ad match 2 times total (thank goodness I happened to have the ads with me both times).
Since this new policy went into effect, it has actually made price matching harder here in Omaha and has caused me to NEED my ads with me all the time. Why you ask? Well, because the checkers are supposed to be responsible to know the ad matches, so the local managers have made up basically cheat sheets of the most common ad matches from week to week for the checkers to use. This means that each time I have a price match the lovely checkers grab their list and check to see if it is listed on it. The problem there is that not all ad prices are listed-only the most common or popular ones (I have found that ends up being the front page items usually).
So, if I give a valid price match that is not on their incomplete list from the managers, the checkers will NOT believe it is valid and will NOT give the price match. So you have to get a manager over and depending on the manager, they often will also NOT match the price UNLESS you show it to them in the ad. SO...I have to have my ads with me all the time to shop now because their lists are SOOOO incomplete. It sucks...that is all.
Another note about the new policy that I hate is that they "DO NOT match the price of Competitors' private label price promotions." This means they no longer price match generic brand to generic brand. DANG! That is super frustrating...
So, is price matching at Wal Mart still worth it? Well, it is now a bigger hassle than it used to be, but it is still a bigger hassle to price match at Target (since I have to go to customer service to check out with price matches there). So, yes, I will continue to price match at Walmart as it saves me so much money, but I will also continue to complain to the managers and corporate at Walmart about how their new policy has had the opposite effect they wanted.
I also will continue to keep my ads in my diaper bag just in case and I will make sure to keep a copy of the ad matching guarantee policy and the coupon policy with me as well. I recommend you also print out the policies and keep them with you.

Everest...how he (finally) got his name...

If you have been reading this blog for a while, you are likely aware of how picky I am with naming my children. I have crazy rules about how unique they must be. (To read all about the details of my rules, see the post here.)
Basically, all of my kids have one "unique" name (as defined by my rules for naming my kids). They also each have a family name. I shared with you the stress I was having in trying to choose a name for my new baby. I always have the hardest time with finding a unique boy name that is not too weird. And lets be honest, I am apparently not good at coming up with the best unique names anyway. I tend to chose names that seem unique or at least lesser used only to find that the names are actually on the list of the top 1000 SSA names or they are listed as more popular on other baby naming sites like babynametrain.com. I told you my favorite boy name was Sawyer, and it is 202 on the most popular list-seriously go look and see.
So, with this new baby (who BTW is a month old already!) I was struggling naming him. My husband and I discussed baby's name a lot. However, at some point my husband told me that I was going to name this child because he did not want to hear forever that he named all the kids. But as I mentioned, I do not pick unique as well as I thought I would. I tend to pick "gaining popularity" type names instead. Wes however is awesome at choosing unique names. So, he is the one that comes up with the names. I just basically have to chose the one I like.
This time, I had to make the final decision. My favorite name, as usual, fell into the "gaining popularity" category (Sawyer), and the other 3 names we liked that I was choosing between were Rockwell, Everest, & Kanell. Please don't mock my choices-I am sensitive.
In the end I went with Everest. It was not listed on ssa's list, but I was surprised to find it was listed on babynametrain.com. My other kids names are not ever even listed, but Everest was listed. I really think it must be because of Mt Everest that it is listed at all though. If you go look, Everest is listed as "not ranked" and "rare".
In the end, I am happy with the choice I made. As a friend noted to Wes, Mt Everest is the highest mountain peak in the world, and surely our little Everest will also rise to the highest heights! We gave him a lot to live up to, but what a grand name it is!! Our friend said she was sure he would live up to his name. Here's to hoping! Doesn't he look like an Everest to you?
